Seitan Burger

Recipe

Instructions:

For the Seitan:

– 2 cups All-Purpose Flour 

– 1 tsp (each) paprika, salt, cumin, garlic powder

– 188 ml water

– 2 cups vegetable broth 

For the Marinade:

– 1 piece Seitan

– 1/2 cup buttermilk

– 1/2 tsp paprika

– 1/4 tsp garlic powder 

– 1/2 tsp salt 

– 1/4 tsp pepper 

For the Breading:

– 1/2 cup flour 

– 2 tbsp cornstarch 

– 1 tsp paprika

– 1/2 tsp onion powder

– 1/2 tsp garlic powder

– 1/4 tsp salt 

– 1/4 tsp pepper 

Instructions:

For the Seitan:

1. In a large bowl, add the flour and seasonings. Whisk together until combined. 

2. Add the water and mix until it forms a scraggly mixture 

3. knead the mixture until it comes together and forms a dough. It should not stick to clean, dry fingers 

4. Submerge the dough in cold water and refrigerate for at least an hour. 

4. Knead the dough with your hands inside the water until the water has turned opaque.

5. Replace the water with clean, fresh water and knead the dough until the water turns opaque once again

6. Repeat the process of replacing the water and kneading the dough until the water is only slightly cloudy, not opaque. you should be left with just the strands of protein.

7. Add the dough into a pot of simmering vegetable broth and cover. Let it simmer for 1 1/2 – 2 hours.

Wrap the seitan in a towel to absorb extra broth while making the marinade.

For the Marinade:

1. In a bowl, add the buttermilk and seasonings. Mix until combined

2. Add the seitan to the bowl and cover it entirely with the marinade

3. Cover the bowl and allow to marinate for at least 45 minutes

For the Breading:

1. In a bowl, add the flour, cornstarch and seasonings. Whisk until combined.

2. Dredge the seitan in the flour breading until completely coated.

3. For a thicker batter, place the seitan back in the marinade, coat it and dredge it in the flour again (optional)

Assembling the Burger:

1. Add the seitan to a pot of hot oil and fry on each side for 2 minutes each, until the batter has become golden brown

2. Remove excess oil using a paper towel

3. Assemble the burger with a toasted bun, seitan and additional toppings (pairs well with mayonnaise, ketchup, lettuce, tomatoes etc!)
