Assorted Cupcakes Recipe

Yield: 12 cupcakes

Ingredients:

cupcakes: 1 vanilla box cake mix (yellow or white!) Additional ingredients required to prepare the batter (ie. oil, eggs and water)

For the vanilla cupcakes:

– ¼ cup sprinkles + extra for topping

For the cookie dough cupcakes:

–   2 tbsp unsalted butter, softened

– 2 tablespoons brown sugar

– 2 tablespoons granulated sugar

– ¼ tsp vanilla extract

– 1 tbsp milk

– ¼ tsp salt

– 6 tbsp heat treated flour Extra chocolate chips, optional (for topping)

– 1 tbsp brown sugar (for the frosting)

– 3 mini chocolate chip cookies (optional, for topping – i used my brown butter chocolate chip cookie recipe! )

For the reeses cupcakes:

– 12 mini reese’s peanut butter cups

– 1 ½ tbsp peanut butter

– 4 mini reese’s, optional (for topping)

For the buttercream:

– 1 stick of butter, softened

– ¼ tsp salt

– ½ tsp vanilla extract

– 4-5 cups powdered sugar

– 1-2 tbsp milk or heavy cream

Instructions:

1. Preheat oven to 350 F (180 C) and line a cupcake pan with 12 liners

2. Prepare the cake mix according to the instructions and bake until golden brown, or until a toothpick comes out clean when inserted Allow to cool completely before frosting

 For the frosting:

1. Add the butter, salt and vanilla to a bowl Use an electric mixer on medium-high speed to whip up the butter until pale and fluffy.

2.  Sift in the powdered sugar 2 cups at a time and incorporate it into the frosting using the mixer. Scrape down the sides of the bowl when necessary so that none of the sugar remains on the sides of the bowl.

3. Add in the milk or heavy cream ½ tbsp at a time until the frosting is silky, yet retains a pipable texture.

4. Divide the frosting into three different bowls for each of the flavors.

For the reeses cupcakes:

1. Before baking the cupcakes, add in 2 chopped reeces into 4 of the unbaked cupcake molds. Bake according to instructions and allow to cool completely before frosting

2. In the frosting bowl, add in 1-2 tbsp of peanut butter until the intensity of peanut butter is desirable based on preference, and mix to combine until the frosting looks uniform

3. Add the frosting to a piping bag and pipe a generous amount onto each of the cupcakes. You could also use a spoon/knife to frost the cupcakes

4. Add an extra reeses cup on top of each of the cupcakes as a topping!

For the Funfetti Cupcakes:

1. Mix in the sprinkles with the frosting, and pipe 4 of the cupcakes with the funfetti frosting. Add on extra sprinkles if desired!

For the Chocolate Chip Cookie Dough Cupcakes:

Cookie dough:

1. In a small bowl, add the softened butter, sugar, brown sugar, vanilla and salt. Mix to combine

2. Add the heat treated flour and milk (if needed) and mix until it forms a cohesive cookie dough

3. Add the chocolate chips and mix again until the chocolate chips have been distributed

Preparing the cupcakes:

1. Use a piping tip or a knife to cut a hole in the center of 4 of the cupcakes Divide the cookie dough and fill each of the cupcakes with the cookie dough

2. Pipe each of the cookie dough cupcakes with the brown sugar frosting and add extra chocolate chips

Top with a mini chocolate chip cookie if desired
